I don't get it, isn't it a difference between a tap and a hold? If you hold on Citlali, she aims, if you tap it she plunges just like in the video. I assumed there was some distinction between the plunge and other airborne skills, so I'm not sure whether I'm mistaken or something else is at-play here.
Funny enough there is a better spot to do this in cats tail. If you get on the counter and jump into the notch of the invite board till you get stuck, then wait till it spits you out then jump and plunge it gives you an endless plunge.
